Phara/ Gojha is an eastern UP and Bihari recipe. In this version we have given it a millet twist with Proso Millet Flour.
Ingredients
1 cup Proso Millet Flour
¼ – ½ cup warm water
Chana Daal 1Cup (Soaked overnight)
Garlic Pods 7-8
Green Chillies 2-3
Cumin Seeds (1 Tsp)
Oil or Ghee (1 Tbsp) Optional
Mustard Seeds ( 1 Tsp) Optional
Chopped Green Dhaniya
Salt as per taste
Instructions
Knead the millet flour dough in warm water. Make sure it is not too soft or too dry.
Grind the soaked chana daal with garlic, green chillies and cumin seeds. It should be coarsely ground. Be careful not to add too much water while grinding as this is the filling for the dumplings.
Add salt as per taste.
Now make small rotis of the dough
Add a generous spoonful of the filling to this and fold the Roti in half like a sandwich
Repeat the process for the remaining dough and filling
Steam these on a steam plate or your idli cooker
To check whether it is done, insert a knife in it. If it comes out clean the faaras are cooked.
Cool them and cut them into pieces
You can have the warm faaras as they are or further sautee them in some oil or ghee
Add some oil or ghee to a pan. Add mustard seeds and wait for them to splutter
Add the cut pieces of the faara and fry them
Add chopped dhaniya and serve hot with chutney of choice
