Guilt free and gluten free Jowar Muffin Recipe.
INGREDIENTS
- 1 Cup Jowar Flour (120 Gms)
- ½ Cup Sugar (80 gms) or as per sweetness required
- ½ Cup Water (125 ml)
- ¼ Cup Olive Oil (62.5 ml)
- ¼ Cup Lemon Juice (62.5 ml)
- 1/2 Tsp Baking Powder
INSTRUCTIONS
- Line a muffin pan with muffin liners. I prefer the reusable silicone liners
- Preheat the oven to 180 degrees celsius
- Cut the lemons and squeeze out the juice
- Keep the juice in a large mixing bowl and add the water to this
- Add the sugar to the lemon water and mix till dissolved
- Add the olive oil and stir with the wired whisk till mixed well
- Sieve the Jowar/Sorghum flour and the baking powder in the bowl
- Mix everything together so that it is mixed properly but avoid over mixing
- Pour the batter into muffin liners
- Bake at 180 degree celsius for 20-25 minutes. Do the toothpick test at the end of the baking to check if the muffins are done.
- Cool the muffins on a wire rack and serve
