LEMONY JOWAR MUFFINS

Guilt free and gluten free Jowar Muffin Recipe.

INGREDIENTS

  • 1 Cup Jowar Flour (120 Gms)
  • ½ Cup Sugar (80 gms) or as per sweetness required
  • ½ Cup Water (125 ml)
  • ¼ Cup Olive Oil (62.5 ml)
  • ¼ Cup Lemon Juice (62.5 ml)
  • 1/2 Tsp Baking Powder

 

INSTRUCTIONS

  1. Line a muffin pan with muffin liners. I prefer the reusable silicone liners
  2. Preheat the oven to 180 degrees celsius
  3. Cut the lemons and squeeze out the juice
  4. Keep the juice in a large mixing bowl and add the water to this
  5. Add the sugar to the lemon water and mix till dissolved
  6. Add the olive oil and stir with the wired whisk till mixed well
  7. Sieve the Jowar/Sorghum flour and the baking powder in the bowl
  8. Mix everything together so that it is mixed properly but avoid over mixing
  9. Pour the batter into muffin liners
  10. Bake at 180 degree celsius for 20-25 minutes. Do the toothpick test at the end of the baking to check if the muffins are done.
  11. Cool the muffins on a wire rack and serve
