KODO MILLET PEANUT RICE

Ingredients

  • 1 cup Kodo millet
  • 3 cups water
  • Roasted and Ground Peanuts (3/4 Cup)
  • Grated Coconut (1/4 Cup)
  • Turmeric (Haldi) 1/2 Tsp
  • Oil (1 Tbsp)
  • Mustard Seeds ( 1 Tsp)
  • Curry Leaves
  • Whole Urad (1 Tsp)
  • Roasted Chana Daal (1 Tsp)
  • Dry Red Chillies (2-3)
  • Salt as per taste

Instructions

  1. Wash the kodo millet and drain
  2. Boil three cups water. Once the water is boiled, add the kodo millet to this, reduce flame and cover
  3. Cook till rice absorbs all the water and then let it cool down
  4. In a separate kadahi/wok, add 1 tbsp oil
  5. Add the mustard seeds and wait for them to crackle. Then add the daals, curry leaves, red chillies and turmeric
  6. Add the peanut powder and coconut powder to this and salt as per taste
  7. Cook for 5 minutes, mixing everything together
  8. Once done, add this delicious mix to the cooked and cooled Kodo Rice and mix well to ensure that it mixes evenly with the rice
  9. Pack this delicious rice for an easy and yummy lunch box option or serve as a light dinner along with papad and raita
